Roast Salmon and sweet potato delight

Ingredients

1 side of salmon (roughly 500g)

4 -6 sweet potatoes

1 tin chick peas

Knob of butter

Juice of 1 lemon

Pinch of salt, pepper and mixed herbs

1 head of broccoli

 

Method

Scrub and pierce the sweet potatoes, add them to a roasting tray and pop them in the oven for 45 minutes

Add the salmon to a roasting tray, then drain the chickpeas and scatter these around the tray beside the salmon, then sprinkle over the lemon juice, salt, pepper and mixed herbs. Then add the butter on top.

Once the potatoes have had 20 minutes, pop the salmon and chick pea mix into the oven beside them to roast for the final 25 minutes.

Whilst the other ingredients are in the oven, cut the broccoli into florets and boil in a pan for 15 minutes or until it’s tender.

When the broccoli is ready drain and allow to cool

As the Salmon, chick peas and potatoes are ready remove from the oven and allow to cool

When all the ingredients are at room temp, remove the potatoes from their skin and then mash together with the salmon/ chick pea mix and the broccoli.

Spoon 2 -3 spoons into your dog’s bowl depending on their size and serve.

This should make 4-6 portions depending on the size of your dog and will keep happily in the fridge for 3-5 days.
